Allergen Management overview

To support compliance with legislation and customer requirements on allergen management, and to provide quick access to allergen information from Food Manufacturing & Distribution, an allergen management module is included.

Use this module to enter the allergens you want to report on to stakeholders, assign allergens to items, unapproved items, and BOMs, and gain visibility into allergen presence across several processes in Food Manufacturing & Distribution.

The basic premise is that allergens present in an item are always transferred to any item that uses that item as input in a production run. The system can execute this so-called rollup, which updates all allergen information at all levels.

When items are purchased or produced, there is a possible risk of cross-contamination, for example, when production of a non-allergen item takes place in the same room where allergen-containing items are processed. You can enter this risk against either an item or a BOM as the type "May contain." This indicates that an allergen could be present in an item, but in very low quantities.

The system retains changes to allergen information at the item level in the form of allergen history. This history details changes to the allergen content of items and BOMs (for both allergens and "may contains"), together with a date/time stamp and the current user. In this way, traceability of allergen information is maintained.
