Allergen Management overview
In order to assure compliance with legislation and customer whishes on allergen-management, but also to be able to inform any stakeholders about allergens quickly based on information contained in Food Manufacturing & Distribution, an allergen-management module has been developed.
This module can be used to enter the allergens on which you want to report to the stakeholders, assign the allergens to items, unapproved Items and BOM's and create visibility into the presence of allergens during a number of processes in Food Manufacturing & Distribution.
The basic premise is that allergens are present in an item and when that item is used as input in a production run, that item being created will always contain that same allergen. This so-called rollup can be executed by the system and will update all available allergen information on all levels.
When items are being purchased or produced, there is a possible risk of cross-contamination e.g. when production of a non-allergen item takes place in the same room where allergens are processed in other production runs. This risk can be entered against either an item or a BOM in the form of the type "May contain". This is the indication that an allergen could be present in an item, but in very low quantities.
Changes to allergen-information on the item-level is kept in the system in the form of allergen-history. This history details the changes made in the allergen-content of items and boms (both for allergens and "may contains"), together with a date/time stamp and the current NAV User. In this way traceability of allergen-information is maintained and kept.
